Week two of The Great British Bake Off was… you guessed it, Biscuit Week! While watching contestants try their hand a brandy snaps and Jammie Dodgers, we thought we’d get in on on the act without the technical challenge.
That’s right – no assembly required here! Just three really delicious, easy biscuit recipes to make this weekend. Our recipe developer, Gemma has included her personal favourite: Triple Chocolate Chunk Cookies. The dark, milk and white chocolate buttons give this cookie the perfect level of sweetness, while being lovely and moreish.
If you’re hankering for something a bit more nutty, we think you’ll love the Spelt Walnut and Chocolate Cookies recipe. The spelt flour and walnuts is a winning combination.
Last in our cookie-lineup is a recipe that leans toward the ‘festive’ flavour spectrum. It’s spiced with cardamom and stem ginger. Which leaves a lovely hum of gingery-heat. Our recipe is is gluten free too!
For the full effect, we suggest serving any of these delicious cookies with a chai tea!

Tip: Bake as a batch or freeze the cookie dough balls for on demand treats baked straight from the freezer.

Tip: Spelt flour is easier to digest than wheat and could be an alternative for those with a wheat intolerance to try. Do note that spelt contains gluten so it’s unsuitable for coeliacs.
