Chocolate Chunk Cookies to Feed The Soul by @gemtakesfoodpics

If there’s one thing we’ve collectively discovered this year, it’s the joy of baking. From the humble banana bread to the slightly more skilful, sourdough loaf, we’ve all been busy in the kitchen. When it comes to baking, sometimes it’s the more simple, home-comfort types that really steal our hearts.

We caught up with Influencer, Gemma (@gemtakesfoodpics) to find out her go-to recipe for home-comfort baking, which for her is Chocolate Chunk Cookies.

A simple but effective recipe that just about anyone with any level of baking experience can whip up in less than an hour. Perfect for enjoying on a chilly evening with a cup of tea in hand. Need we say anymore?

You’ll need:

  • 1 chopped milk chocolate bar
  • 125g lightly salted butter
  • 80g dark brown sugar
  • 80g caster sugar
  • 225g plain flour
  • 1 dash of vanilla extract
  • 1 egg
  • 1/2 tsp bicarbonate of soda
  • pinch of salt

How to:

  1. Preheat the oven at 170c (fan)

  2. Chop up your chocolate bar into small pieces

  3. Cream the butter and sugar together until completely soft and combined.

  4. After, add in the flour and bicarbonate of soda, give it a good mix until a dough has formed

  5. Stir in the chocolate chunks until they are evenly spread throughout the mix

  6. Line the trays with 6 scoops of cookie dough on each tray (2 in total)

  7. Pop in the oven for 11-12 minutes until golden and browning on the edges

  8. Let cool for a few minutes and then enjoy!
