Here's how you do it

  1. Cook lentils according to pack instructions. You can cook them in stock for a little more flavour.
  2. Char squash, onions and courgettes, toss with oil, roast together with tomatoes on the vine.
  3. Scatter over nuts, dried fruit or herbs.
