Welsh Rarebit

Cheese on toast, but better. This calls for the Welsh organic cheddar Hafod; cheese made from raw Ayrshire milk that has a rich, nutty flavour that works well with fruitiness of the beer.

Here's how you do it

  1. Melt the butter in a saucepan, then add the flour. Stir for 2 minutes.
  2. Add the beer to the pan slowly, stirring continuously. Leave to bubble away for 5 minutes.
  3. Stir in the grated cheese, season with salt and pepper. Add the mustard and leave to cook for 5 minutes.
  4. Grill the bread on both sides. Coat the bread with with rarebit mixture and put back under the grill until it is golden and bubbling. Serve with watercress on the side.


  • 350g Hafod Welsh organic cheddar, grated
  • 8 slices of Bukowski sourdough
  • 330ml beer, room temp
  • 60g organic salted butter
