Preheat the oven to 180C. Place feta in the middle of a piece of baking parchment, making sure you have enough paper around the perimeter to loosely wrap.
Drizzle the honey, olive oil, pine nuts and thyme over the feta. Gather the corners of the parchment and twist them at the top to seal in the feta and flavourings.
Bake in the oven for 10 minutes. Open up the parcel at the table and serve with crusty bread.
