Here's how you do it
Heat a glug of oil in a heavy bottomed pan, add the onions and sweat for 5 minutes. Add the orange juice & stir. Add the peeled and cubed beetroot, carrots, ginger and stock. Bring to the boil and then simmer for 25-30 minutes. Pulse with a stick blender. Enjoy warm or chill in the fridge for a couple of hours before serving.
