Sweet & spicy, this is the perfect healthy pick-me up that is delicious served hot or chilled with torn up sourdough and a drizzle of extra virgin olive oil.

Here's how you do it

  1. Heat a glug of oil in a heavy bottomed pan, add the onions and sweat for 5 minutes. Add the orange juice & stir. Add the peeled and cubed beetroot, carrots, ginger and stock. Bring to the boil and then simmer for 25-30 minutes. Pulse with a stick blender. Enjoy warm or chill in the fridge for a couple of hours before serving.


  • 3 large beetroot, peeled & cubed
  • 3 carrots, peeled and chopped
  • Juice from 1 orange
  • Thumb of ginger, grated

  • 1 onion, finely chopped
  • 1 litre veg stock
