A really versatile, piquant stew to serve with potatoes, pasta, on sandwiches or piping hot with torn bread.

Here's how you do it

  1. Halve and thinly slice peppers removing the pith and any seeds. Thinly slice red onions.

  2. In a heavy based pan add oil and heat gently, add red onion and cook on low for ten minutes, not allowing to onion to brown.

  3. Add peppers and garlic, cook for a further 10 minutes.

  4. Add tomatoes whole & cook for 30 minutes.

  5. Smush some of the tomatoes, add half a cap of red wine vinegar and season generously.
