Honey & Thyme Carrots

Roasting carrots brings out their sweetness & the addition of honey and thyme makes these the perfect accompaniment to your Sunday roast.

Here's how you do it

  1. Pre-heat the oven to 200C.

  2. Scrub or peel your carrots, take the tops off and slice down the middle. If the carrots are huge then halve but try to keep the same size so they cook evenly.

  3. Pop the carrots on a roasting tray an drizzle 2 tbsp olive oil, 2 tbsp honey & 1 tbsp lemon juice along with the picked leaves of 5/6 sprigs of thyme. Mix everything together well...it's best if you use your hands for this (or get the kids to do it.)

  4. Allow the carrots to roast and caramelize for 25 minutes, turning half way through.


  • 500g carrots
  • 5/6 sprigs thyme
  • 2 tbsp honey
  • 1 tbsp lemon juice
