Panettone Bread & Butter Pudding

Add a bit of Christmas magic to an old favourite using the Italian sweetened bread Panettone. The scent of this baking in the oven will be enough to make you giddy with festive cheer.

Here's how you do it

  1. Preheat the oven to 180°C. Grease a baking dish with plenty of butter.
  2. Slice the panettone in half vertically, then vertically cut each half into 2 inch thick wedges (like you would a cake).
  3. Whisk together the milk, cream, eggs, 1 tbsp sugar and cinnamon in a large bowl.
  4. Arrange the panettone slices in the baking dish, then pour over the custard mixture. Leave to soak in the custard for 20 minutes.
  5. Sprinkle over the remaining sugar and bake for 20 minutes, when the custard has set and the top is lightly browned. Spoons at the ready!

  • 350ml whole milk
  • 100ml double cream
  • 2 eggs, beaten
  • 2 tbsp light brown soft sugar
  • A pinch of cinnamon
  • Butter, to grease baking dish
