This recipe calls for you make your own Chinese five spice mix, which is very easy to do and gets tasty, aromatic results. Add it to a marinade thats rich in flavour and you have yourself a supper for two that is a taste sensation.

Here's how you do it
To make the 5 spice mix add the cinnamon, star anise, fennel seeds, peppercorns and cloves to a dry saucepan. Turn up the heat and cook the spices until they become fragrant.
Add the toasted spices to a blender and blend into a powder.
Mix the 5 spice blend with the garlic, ginger, honey, sesame oil, soya sauce, brown rice vinegar and rapeseed oil.
Coat the chicken thighs with the marinade and massage into the skin. Cover and refrigerate overnight.
Preheat the oven to 200°C. Season the chicken thighs with salt, put in a roasting tin and roast for 30 minutes.
Serve sprinkled with sesame seeds and spring onions, with a bowl of steamed rice.
