Bacon Jam

Spread it on toast and top with crumbly cheddar; have it with your fried eggs at breakfast or dollop it on top of your burger, bacon jam is as versatile as it is delicious.

Here's how you do it

  1. Dice the bacon into small pieces, then fry in a pan until lightly golden and crispy.
  2. Remove the bacon with a slotted spoon, leaving the fat in the pan. Fry off the shallots in the fat, on a low heat until soft and sticky; about 15 minutes.
  3. Add the garlic, paprika and chilli flakes. Fry for 30 seconds.
  4. Return the bacon to the pan and add the sugar, vinegar and water.
  5. Bring up to the boil then turn down to simmer for 15-20 minutes, until it has reduced to a sticky jam-like consistency.
  6. Cool down and transfer to sterilised jam jars. Keep for up to 10 days.


  • 200g smoked streaky bacon
  • 2 banana shallots, chopped
  • 2 cloves garlic, crushed
  • 1/2 tsp smoked paprika
  • 1/2 tsp chilli flakes
  • 200g light brown sugar
  • 200g cider vinegar
  • 200ml water
