These little cheesy puffs make great canapes; they're as light as air and made with Montgomery's cheddar, which makes them rich in cheesy flavour.

Here's how you do it
Preheat the oven to 220°C. Heat the water, milk, butter, salt and chilli flakes with a twist of black pepper in a pan and bring to the boil.
Add the flour and stir vigourously until a dough forms. Remove from the heat and leave to cool for a minute.
Beat the eggs into the dough, one at a time. Make sure each egg is fully incorporated before adding the next.
Now beat in 3/4 of the grated cheese.
Scrape the mixture into a piping bag. Pipe walnut sized balls of the dough onto a baking tray lined with parchment. Leave about two inches between them, to allow them space to grow. Sprinkle the rest of the cheese onto each ball.
Bake in the oven for 10-15 minutes, until they are puffed up and golden.
