Sometimes all that's needed is a cheese toastie. To make something so simple so delicious, it requires the best of ingredients. We've used tangy mature cheddar from the Isle of Mull, lightly salted butter churned in Somerset and freshly baked bread from Brixton.

Here's how you do it
Grate the cheddar.
Heat the butter in a frying pan on a medium heat.
When the butter has melted, add the slices of bread. Turn them in the butter so that they are coated on both sides.
Add the grated cheese to two of the slices of bread. Cover both with the other two slices and press down with a plate for 30 seconds, until the underside has become golden brown. Flip over and repeat for the other side.
