A decadent breakfast treat or a delightful, easy supper. The Croque Monsieur is an oozy, cheesy, creamy delight of a sandwich.

Here's how you do it

  1. Preheat the oven to 180°.
  2. To make the bechamel, melt the butter in a pan. Whisk in the flour and cook for 2 minutes, until a light biscuity colour.
  3. Add the milk gradually off the heat, whisking continuously. Put back on the heat, bring up to the boil and leave to bubble for 5 minutes, while stirring. Season with salt and pepper.
  4. To make the sandwich, melt the butter in a frying pan. Add the slices of bread and turn them so that they are golden on both sides.
  5. Now for the assembly; spread the dijon onto two slices of bread, followed by a generous dollop of bechamel, and slices of ham. Top with half of the comte, then add the other slices of bread to cover.
  6. Put the sandwiches into an oven proof dish and sprinkle with the remaining cheese. Bake in the oven for 5-10 minutes until the cheese is melted and bubbling.

  • 60g ham
  • 1tsp dijon mustard

  • 25g butter
  • 25g plain flour
  • 200ml milk
