Lamb Kofte

Spiced lamb kofte are quick to prepare, which makes them a great midweek meal. We've added sumac to the mix; a crushed berry with a tart citrus flavour, often used in Middle Eastern cooking.

Here's how you do it

  1. Preheat the oven to 200°C. In a large bowl, mix together the lamb mince with the shallots, cumin, chilli flakes, cinnamon, sumac, salt, pepper, mint and parsley.
  2. Divide the mixture into balls, weighing about 40g each. Roll the balls in your hands to make them cylindrical shaped.
  3. Heat a glug of olive oil in a frying pan and brown the kofte on all sides, in batches.
  4. Place the kofte on a baking sheet and finish them in the oven for 5 minutes. Serve in a warm pitta, with fresh herbs and garlic yoghurt.


  • 350g lamb mince
  • 2 shallots, finely chopped
  • 3 tsp shallots
  • 1 tsp chilli flakes
  • 1/2 tsp cinnamon
  • 3 tsp sumac
  • 1 tsp salt
  • 1 tsp black pepper
  • 10g mint, finely chopped
  • 10g parsley, finely chopped
