Poke (pronounced poh-keh) is a raw fish salad popular in Hawaii. It's quick and easy to prepare, full of flavour and nutritious. Poke requires the best quality fresh fish, which is why we've used Chalk Stream trout.

Here's how you do it
Prepare the trout by first removing the skin - with the fillet skin side down, run a sharp knife slowly along the fillet with the blade angled slightly downwards, firmly gripping the skin as you cut. Once the skin is removed, dice the trout into small cubes.
Rehydrate the seaweed by soaking it for five minutes in boiling water. Drain, then finely chop.
Mix the trout with the sesame oil, soya sauce, chilli flakes, sesame seeds and seaweed. Leave for five minutes then serve. Poke can be served on it's own or is great with a bowl of rice and some sliced avocado.
