This is a simple, healthy supper that requires minimal effort. It's also one of the best ways to cook fish as all the flavourful juices aren't able to escape. Pouting is a member of the cod family, so has a similar tender flaking texture.

Here's how you do it
Preheat the oven to 200ºC.
Tear off a piece of tin foil that is rectangular in shape and is large enough for the fish, with room to also fold all around the fish once the vegetables are added, to create a parcel. Tear off a piece of parchment paper of the same size and place on top of the tin foil.
Place the pouting on top of the parchment, season with salt and pepper then add the tomatoes, shallots, spinach and parsley. Pour over the lemon juice and wine, with a good glug of olive oil and season again. Fold the tin foil and baking parchment around the fish to create a sealed parcel. Cook the parcel on a baking tray for 15-20 minutes, then serve on plate to be unwrapped at the table.
