A fresh and vibrant salad made with Graceburn cheese - similar to feta, but made much closer to home in Kent.

Here's how you do it

  1. Put all the salad ingredients into a bowl, saving the Graceburn cheese to be sprinkled on top.
  2. Pour over the dressing and mix the salad.
  3. Scatter a few extra oregano leaves on top and serve.


  • 1/2 an organic cucumber, cut into small chunks
  • 1/2 an organic green pepper, sliced into thin strips
  • 250g organic cherry tomatoes, halved
  • 60g black kalamata olives, pitted and halved
  • 1/2 an organic red onion, very thinly sliced
  • 100g Graceburn cheese, crumbled
  • 10g organic oregano, leaves picked and roughly chopped

What you'll need

  • 2 tbsp red wine vinegar
  • 6 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
