Chard Gratin

A delightfully decadent way of celebrating chard. This is a great accompaniment to a roast, or it can simply be enjoyed for supper on its own, mopped up with bread.

Here's how you do it

  1. Preheat the oven to 180°C. Put a large pan of salted water on to boil. Wash the chard, strip off the leaves and chop the stalks into 3cm sized chunks.
  2. Throw the stalks into the boiling water and cook for 6 minutes, then throw the leaves in and cook for a further minute. Drain, refresh in cold water, then drain again.
  3. In a large pan, melt the butter and stir in the flour. Cook for a minute then slowly whisk in the milk, bring to the boil for 5 minutes to thicken.
  4. Stir in the grated cheese, to melt it. Then stir in the creme fraiche and season with salt, pepper and lemon juice.
  5. Arrange the chard into an oven proof dish, then pour over the cheese sauce. Put it in the oven for 20 minutes, until it is browned on top.


  • 200g organic chard
  • 120ml organic milk
  • juice of 1/2 an organic lemon
  • 100g organic cheddar, grated
  • 2 tbsp organic double cream
