Here's how you do it

  1. Bring a large pan of salted water to boil. Cook the macaroni for 8-10 minutes, until al dente. Drain the pasta and reserve the cooking water.
  2. Grate the vegan cheddar and stir through the hot pasta, adding the yeast, chilli powder and dijon mustard.
  3. Slowly add the cooking water to the pasta while stirring, to create the sauce. Add enough water to make a sauce that coats the pasta well. Season with salt and pepper, serve.

  • 120g vegan cheddar
  • 1 tbsp nutritional yeast
  • 1/4 tsp chilli powder
  • 1/2 tsp dijon mustard
  • salt and pepper
