Perfect for a weekend brunch, or a simple weeknight supper. Just add crusty bread to mop it all up.

Here's how you do it

  1. Preheat the oven to 180℃.
  2. Add a glug of olive oil to an ovenproof frying pan and fry the onion until soft.
  3. Add the red pepper, chilli, garlic, smoked paprika and cumin seeds. Fry for 5 minutes.
  4. Add the tomatoes, salt and sugar. Bring to the boil and simmer for another 5 minutes.
  5. Carefully break the eggs on top and place the pan in to the oven. Cook for 10 minutes, until the white of the eggs has set. Serve with crusty bread to mop up.

  • 1 red onion, finely sliced
  • 1 red pepper, finely sliced
  • 1 tin of chopped tomatoes
  • 1 chilli, deseeded and finely chopped
  • 1 clove garlic, crushed and chopped
  • 2 tsp cumin seeds
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1 tsp sugar
