Kimchi Fried Rice

Here's how you do it

  1. Put a pan of salted water on to boil. Add the rice and cook for 35-40 minutes, until tender.
  2. Add a glug of oil to a frying pan and fry the onion until soft.
  3. Add the garlic, chilli, ginger and red pepper. Fry for 5 minutes. The pepper should still have bite.
  4. When the rice is cooked, drain it well then stir through the onion and pepper mix in to it, as well as the kimchi, soya sauce and sesame oil. Taste and season with more soya and sesame if you prefer.
  5. Fry the eggs in a little oil in the frying pan.
  6. Serve the kimchi rice in a bowl, topped with the fried egg, carrot ribbons, spring onions and sesame seeds.

  • 240g organic mixed wild rice
  • 1 organic onion, chopped
  • 1 organic red chilli, chopped
  • 2 cloves of organic garlic, chopped
  • 2 inches of organic ginger, peeled and finely chopped
  • 2 tbsp kimchi
  • 1 organic red pepper, sliced
  • 2 organic rainbow carrots, peeled into ribbons
  • 2 organic spring onions, sliced
  • 4 organic eggs

  • 2 tbsp soya sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
