Brown Shrimp and Courgette Pasta

This is such a quick and easy pasta dish, using little brown shrimps that are packed full of flavour.

Here's how you do it

  1. Put a large pan of salted water on to boil. Cook the pasta according to the pack instructions then drain, reserving some of the cooking water.
  2. Heat a glug of olive oil in a frying pan and fry the shallot and garlic clove until soft.
  3. Add the courgette, lemon zest, chilli flakes and salt; fry for 2-3 minutes more.
  4. Stir in the brown shrimps (just to heat through, as they are already cooked).
  5. Return the drained pasta to the pan, then stir in the shrimp and courgette mixture. Add a little more olive oil and pasta water to loosen, sprinkle with parsley and serve.


  • 100g cooked and peeled brown shrimps
  • 250g pasta (trofie, orecchiette and chonchiglie work well)
  • 1 tbsp chopped organic flat leaf parsley
  • 1 organic shallot, finely chopped
  • 1 organic garlic clove, finely chopped
  • 1/2 an organic courgette, cut into small, thin pieces
  • 1/2 an unwaxed, organic lemon zested
