Fresh and fragrant za'atar works well as a quick marinade for monkfish, but is also delicious with chicken and roasted vegetables.

Here's how you do it

  1. Preheat the oven to 180℃.
  2. Mix the za'atar with the olive oil, a pinch of salt and pepper.
  3. Rub the za'atar mix into the monkfish fillets, place in a roasting dish and bake for 8-10 minutes.
  4. Melt the butter in a saucepan, add the onion and cook for 5 minutes to soften.
  5. Add the pine nuts and cook for 5 minutes more, to colour.
  6. Serve the monkfish on top of the caramelised onion and pine nuts.

  • 2 tbsp Rooted Spices za'atar
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 red onion, sliced
  • 1 tbsp pine nuts
  • salt and pepper
