Here is Farmdrop chef Anneth's Jerk chicken recipe, perfect for your barbecue. The scent of this cooking as it wafts through the office makes us all want to pack up our desks and escape to the sunshine.

Here's how you do it

  1. Blend together all the jerk marinade ingredients in a food processor.
  2. Score the chicken legs and rub the marinade in well. Scoring the skin allows the flavour to really get into the meat. Marinate at least 30 minutes before cooking, but for best results leave overnight.
  3. The next day, heat your barbecue up, or if you'd like to create this indoors then put the oven on to 180℃ and a griddle pan on to a high heat.
  4. If barbecuing, grill the chicken on both sides on a high heat, then move to a cooler part of the barbie and leave to cook for 25 minutes, until the chicken is cooked through.
  5. If indoors, griddle the chicken on both sides then put in a roasting tin. Cover and cook in the oven for 25 minutes, until cooked through.

  • 4 chicken legs

Jerk Marinade

  • 1/2 brown onion
  • 1/4 scotch bonnet, with seeds
  • 10 sprigs of thyme
  • 2 tsp all spice
  • 1 inch of ginger, peeled and grated
  • 2 cloves of garlic, chopped
  • 2 tsp brown sugar
  • 1 tsp salt
  • 2 tsp soya sauce
