Here's how you do it

  1. Preheat the oven to 180℃.
  2. Empty the tortilla chips into a roasting tin, scatter over the cheddar and jalapenos and bake in the oven for 10 minutes.
  3. Make the salsa by dicing the tomatoes, finely chopping the red onion and coriander and mixing together with the lime juice, salt and hot sauce.
  4. Make the guacamole by mashing the avocado with a fork, then mix together with the lime juice, coriander and salt.
  5. Serve the cheesy nachos with the sour cream, salsa and guacamole dolloped all over on top.

Ingredients

  • 250g tortilla chips
  • 200g organic cheddar, grated
  • 100g organic jalapeno peppers
  • 150g sour cream

Salsa

  • 3 organic tomatoes
  • 1/2 organic red onion
  • Juice of 1/2 an organic lime
  • 10g organic coriander
  • 1tsp habanero hot sauce

Guacamole

  • 1 organic hass avocado
  • Juice of 1/2 an organic lime
  • 10g organic coriander
  • 1tsp habanero hot sauce
