Also known as temaki sushi, these hand rolls are fun to make and can be filled with colourful seasonal veg.

Here's how you do it
Wash the sushi rice in cold water and drain.
Transfer the rice to a saucepan with 300ml cold water and leave to soak for 30 minutes.
Bring to the boil, cover and simmer for 10-12 minutes, until all the water is absorbed.
Remove from the heat and leave covered for 10 minutes.
Spread out the rice onto a baking sheet and sprinkle over a tablespoon of rice wine vinegar. Use a large spoon to fold the sushi rice over on to itself, to help it stick together. Leave to cool to room temperature.
Slice all the vegetables into thin strips.
Cut a piece of nori in half and place one half in your hand, shiny side down.
Wet your other hand and take a handful of cooked rice, place it on the left third of the nori.
Sprinkle the rice with a pinch of sesame seeds and arrange a few strips of different veg across the middle of the rice.
Fold the bottom left corner of the nori over and begin folding into a cone shape.
Keep rolling into a cone shape, use a little water to seal the nori. Repeat for more hand rolls.
