Homemade Pickled Ginger

Homemade pickled ginger is really simple to make and is the perfect partner for sushi.

Here's how you do it

  1. Peel the ginger and use a mandolin to slice it into very thin strips.
  2. Sprinkle the ginger with salt and leave for 30 minutes.
  3. Squeeze out any liquid and put the ginger into a sterilized jar.
  4. Place the rice vinegar, water and sugar into a pan and heat until the sugar melts.
  5. Pour the liquid over the ginger, leave to cool then place the jar in the fridge overnight, to allow the pickling to take place.
