Flat Peach, French Bean and Stilton Salad

A simple summer salad of charred peaches and crunchy green beans, topped with stilton and hazelnuts.

Here's how you do it

  1. Preheat the oven to 180℃.
  2. Pour the hazelnuts onto a tray and roast them in the oven for five minutes, until golden. Roughly chop them and set aside.
  3. Bring a pan of water to boil. Chop the ends off the french beans and boil them for three minutes, then plunge them into cold water and drain.
  4. Put a griddle pan onto a high heat (or light up your bbq). Halve the peaches, drizzle with oil and griddle them for a few minutes on each side, until they are soft and charred.
  5. Arrange the peaches and beans onto a platter, crumble over the stilton and sprinkle over the hazelnuts. Drizzle over the honey, vinegar and olive oil, season with salt and pepper and serve.

  • 3 organic flat peaches
  • 100g stilton
  • 50g organic hazelnuts
