This hearty vegan sandwich packs a flavour punch, thanks to the addition of Rubies in the Rubble's chilli onion relish and plant based chilli mayo. Rubies in the Rubble has been turning surplus food into high-end chutneys and relishes since 2011, using fruit and vegetables usually thrown away before they reach supermarket shelves.

Here's how you do it
Begin by adding the chickpeas to a large bowl and mashing. Add the salt and spicy mayo and combine.
Slice 3/4 of the red onion and put to one side. Dice the remaining 1/4 and fold it though the smashed spicy chickpeas.
Now toast the bread and spread the dairy free butter on each slice.
Load up the bread with smashed spicy chickpeas followed by the sliced red onion and tomato, lettuce and chilli onion relish. Enjoy!
