Few wine growing areas marry soil and wine as ideally as Château Capion. In less than a decade this beautiful estate has emerged as one of the most exciting properties of Southern France. Located in the Languedoc Roussillon near the medieval village of Saint Guilhem Le Desert and to the north-west of Montpellier, the domain encompasses 75 hectares with just over half planted to vineyards. The river Gassac from which the valley takes its name, flows through the property bringing an abundance of wildlife to the estate.
Winemaker Frédéric Kast insists on small yields (4-8 tonnes per hectare), natural fertilisers only if absolutely necessary (guano), and that no wild yeasts are destroyed. All of this ensures that their wines speak as naturally as they can for themselves, their region and their terroir.
