Clean Bean tofu is made by Neil McLennan, who started making fresh tofu for a market stall in 1997, after developing a taste for tofu whilst living in Sichuan, China. In Asia, making good tofu is recognised as a craft, and Neil has been working on it continuously, now supplying many restaurants and shops from a converted furniture factory on Brick Lane, London. ‘Good tofu is best made slowly and carefully’ he says, ‘all my tofu is made by hand, no secrets other than many years’ practice and observation. It’s always a pleasure to spend a day producing the best organic tofu I can.’
