Joël's wines are best drunk while they are young and fresh. They are fermented in temperature controlled stainless steel tanks after undergoing a short cold maceration to bring out the aromas. The pale rosé is a blend of 80% Gamay and 20% Pineau d'Aunis and has good depth on the mid-palate that is balanced nicely by a racy acidity on the finish. The Touraine Gamay brims with raspberry fruit on the nose with round tannins and a hint of spice on the palate. A judicious amount of carbonic maceration contributes to its immediate appeal on the nose.
