With fresh La Tua pasta and a pre-made spinach and pea sauce, this fresh, vibrant dish is ready in just 15 minutes - see just how simple this elegant dish is to make in the 'cooking instructions' section.

Difficulty level: Easy. Ready in around 15 minutes.

Packed and prepared in a kitchen that processes products including gluten, fish, eggs, milk, nuts, peanuts, soya, celery, mustard, sesame, sulphites and sulphur dioxide. Some basic store cupboard ingredients (salt, pepper, olive oil, chilli flakes) are not included in the kit.

Cooking Instructions

1. Zest the lemon, reserve. Cut the lemon in half. Pick the mint leaves and shred finely 2. Bring a medium pan of salted water to the boil and cook the tortelloni for 4 minutes. 3. Add the pea and spinach puree to a frying pan with half the shredded mint leaves. Bring to a gentle simmer. 4. Add the peas and a little pasta water to the spinach and pea sauce and mix gently to warm through. 5. Divide the hot sauce between two deep pasta bowls and top with the cooked, drained tortelloni. 6. Scatter with the crumbled goat’s cheese, peas, the remaining mint, lemon zest, a squeeze of lemon juice and top with pea shoots.
