A classic blue veined cheese made from the milk of our own organic cows. Ripened in our traditional stone built rooms for eight to ten weeks to give a creamy blue veined taste.
The cheese contains subtle blue veins and there is a degree of surface mould ripening. The blue mould ripens inside the cheese while the white mould ripens from the surface. This results in the cheese imparting lots of flavours.
