Blue corn tortillas, essential for making large tacos, quesadillas, enchiladas or mopping up sauces and when a little older fry for tostadas, totopos, flautas and crispy tacos. Each packet contains 13 15cm tortillas.

Cut a boneless fillet of white fish into 2½ cm wide finger length strips. Whisk together plain flour, salt and pepper, a little pinch of Cool Chile Co Chipotle Powder, an egg and very cold beer until batter consistency. Dip the fish in the batter to cover then shallow fry in a few centimeters of very hot oil in a high-sided pan until crisp and golden, flipping halfway through. Drain on kitchen towel then serve on warmed tacos with shredded lettuce and red cabbage, Cool Chile Co Chipotle Mayo and a squeeze of lime.

Storage Information and Shelf-life

Keep refrigerated. Once open, wrap and consume by use by date. Suitable for freezing (freeze on day of purchase and consume within 1 month). To cook from frozen, prise one tortilla off at a time and heat in a hot pan on both sides or defrost in the packet overnight in the fridge.

Cooking Instructions

- For best results griddle tortillas one at a time in a dry pan, toast both sides until warmed through and little brown spots appear if desired. - Use a little spray of water to help re hydrate the tortillas as they reheat if a few days old. - If necessary tortillas can be kept warm for about 15-20 minutes after reheating by stacking them in a folded clean tea towel, top and serve reheating by stacking them in a folded clean tea towel, top and serve promptly.

Meet Cool Chile Co.


We began small, importing a handful of chilli varieties and selling them from our market stall, first in Portobello Market and then in Borough. While travelling in Mexico, we researched (ate), tested (ate), tasted (ate) and when we got home, we began to produce our own salsas, sauces and pastes, faithfully made using traditional Mexican recipes and our delicious imported chillies. In 2005, fresh corn tortillas were hard to come by so we imported a shiny new tortilla machine, which we named Lupita, and began making our own corn tortillas. After three years' faithful service, Lupita couldn't keep up with the increasing demand and was replaced by El Monstruo, which produces our fresh corn tortillas daily, seven days a week. Cool Chile has been going for over 20 years and we still import dried chillies, herbs and masa harina directly from Mexico where the flavour and quality is second to none. All our products are shipped by sea so as to leave as small a carbon foot print as possible. Our chillies come in three different forms: whole, diced or powdered. Our corn tortillas are freshly made to order and are preservative and gluten free. Our sauces, from achiote to mole, are all made without preservatives, and we grind cocoa nibs to make delicately spiced Mexican and Maya drinking chocolate.
