Hogweed is a plant of hedgerows, field margins and woodland edges. It is a relative of celery, parsnip and angelica. The flavour of the seeds is suggestive of oranges, coriander seed and cardamom.
The seed is widely used in Iran, where it is known as golpar, as well as in Iraq and Syria. It is used to complement pomegranate and added to rice served with rose water. The only documented use for the seeds we know of in the UK is as a brewing herb, used in place of hops to make beer.
Blitz in a high speed blender or coffee grinder and use to flavour custard, ice creams, set cream or cooked fruit or with other wild spices to flavour savoury dishes. They can also be used as a mulling spice or in homemade bitters.
