Wild sorrel has a distinctive sour/lemony taste ('sorrel' comes from the Anglo-Saxon 'sur', meaning sour, and 'el', meaning all).
Wild sorrel has smaller leaves than the cultivated counterpart. These tender young leaves are lovely in salads - fresh, green & crisp - with a lemon flavour that it its own dressing.
Store with a damp cloth to prevent drying out entirely but otherwise ensure the leaves are dry. Will keep for 2-3 days in the fridge.
