One of the niftiest herbs we grow. Coriander has a host of different purposes with both leaves and seeds used heavily in both North African and Asian food, where their pungent and robust flavours cut through and complement many different dishes. The big flavours of coriander make it the perfect companion to a Crispy Asian Beef Salad. Simply coat good sliced steak in cornflour and fry to achieve a crispy texture. Add whole leaf spinach, cucumber, thinly sliced red onions to a bowl before tossing in both the cooked beef and a small handful of chopped coriander. Dress liberally with lime and pomegranate juice. Delicious!

Like most great ideas, Growing Underground was born over a pint (or three). After debating the future of feeding rapidly expanding populations in overflowing cities, Richard and Steven stumbled over the idea of using London’s empty, forgotten underground tunnels as the backdrop for growing the city’s freshest greens. At Growing Underground we are using the latest hydroponic systems and LED technologies to grow sustainable and mouth-wateringly crisp greens with minimal impact on the environment. Our London tunnels are a surprisingly perfect home for our plants – unlike traditional farming, we are unaffected by the weather, have no use for pesticides, and even require 70% less water. Not only are we dedicated to growing the most flavour-packed greens around, but we are committed to doing it in the most environmentally friendly way possible. Our energy comes from renewable sources, our packaging is made from recycled materials, and come June we will be zero carbon rated. Also, with partnerships like Farmdrop we are able to drastically reduce food miles by keeping our produce in town. Keeping our food local is one of our biggest priorities - if you can’t get it quickly, we don’t want you to have it. We think that we should be able to feed our city with delicious produce grown sustainably right here in the city. We’re excited to be introducing more Londoners to our products one green leaf at a time, and we look forward to you loving our salad as much as we do.
