The high levels of rich, creamy marbling gives a luxurious eating quality to the meat.

100% pasture fed beef does benefit from a lighter touch in the kitchen compared with conventional beef. To cook, add a bit of dripping (or oil) to the pan and cook to medium rare. The important point here is that you want the fat to gradually melt while the exterior of the meat caramelises. So use a medium heat and finish in the oven if necessary. Season and rest well.

These organic and 100% pasture fed dairy cows are milked once a day for life, producing nutrient dense milk which is now being used to make the UK’s first 100% pasture fed cheeses. At 8 years+, retired cows will continue to graze pasture for at least another season before they feed back into this “closed loop” food system as cow beef. The meat is dry aged for 4-8 weeks.
