Born last spring, these Wiltshire Horn lambs are now a year old which means they are technically called hogget. Reared for superior flavour and eating quality, the sheep at Horton House graze the top of the chalk downs above the farm, where the lambs remain with their mothers for a year. Hung for two weeks and then butchered by the team at Proper Food Collective in Twickenham.
