Looking like a bulbous celery heart, Florence fennel, or finocchio, is in fact the swollen base of the stem of the plant. It grows best in Mediterranean or mild, temperate climates around the world.
For a crisp bite and aromatic aniseed flavour, eat as soon as possible, but bulbs can be kept in the fridge for up to a week. If the fronds are attached, remove these as they can draw moisture from the bulb. Store in the fridge and use as you would dill or other herbs - great in a pesto!
