Long prized for its medicinal and culinary properties, garlic is a cornerstone of global cuisine.
Garlic bulbs contain a sulphuric compound just like onions, shallots, and other members of the allium family. In the wild, this acts as a defence to ward away animals. The sulphur compounds are released as soon as we cut into a bulb of garlic, exposing it to the oxygen in the air. More chopping will release more of the compounds, so it follows that minced garlic will have the strongest taste.
Store in a cool, dark place, well-ventilated place. A bulb will last for several months, and once the bulb is broken, individual cloves will last unpeeled for about 7-10 days.
