Glossy and bright, organic yellow peppers are mellower than their younger green counterparts – great for eating raw either as crudités, or in salsas and salads.
Dice raw with other varieties as part of a kaleidoscopic salad, or enjoy a bowl of sunshine and make a sweetcorn and yellow pepper soup. To heighten their sweetness, roast in the oven with red onions, or add to a stir-fry – their versatility is endless! Keep on a cool veg rack.
Store in the fridge for 1-2 weeks.
