Originally made from sheep's milk, this cheese from the eastern Mediterranean is now made in a mixture of cow's, goats, and sheep's milk.
It is a firm, mild cheese with added mint - as it contracts on cooking and doesn't fall apart it is ideal for barbecued or grilled dishes.
