Forced rhubarb is only available in the winter months. Grown in darkness, it is traditionally hand-harvested by candlelight as light causes the plant to stop growing. For every litre of yoghurt, Dorset Dairy start with three litres of milk from their pasture-raised Holstein Friesian cows. After adding their carefully selected live cultures (including probiotics), it is strained using traditional methods to create a thick, creamy texture packed with protein.
