Organic topside of beef is a lean and tender joint, cut from the rump and then carefully boned and hand-rolled.
Wrap in bacon, barding fat or rub with olive oil to retain moisture before quickly roasting and serving pink, or alternatively pot-roast slowly for tender, succulent meat. Cold and finely sliced, turn any leftovers into the ultimate beef sandwich.
Keep in original packaging & refrigerate. Remove from packaging & rest at room temperature before cooking.

To roast to medium: Preheat oven to 190C and roast for 25 minutes per 450g, plus an additional 25 minutes.

While the hens hitch-hike, Rowie and her sheepdog Loopy take walks around the farm to check on the vegetables – including the nine poly-tunnels in which they grow heat-loving aubergines, melons and oriental greens. Staffed by daughters, nephews, nieces and friends, Purton House truly is a family venture – and workers who aren’t related are treated just like they are! Lunch is served to all workers and anyone idly wandering into the kitchen would find it impossible to tell who was family and who wasn’t.
