I worked my magic on this classic to create a super-healthy and seasonal face lift to the much-loved Shepherd’s Pie.
The filling is lighter with a mix of lean lamb and green lentils, flavoured with tomatoes, aubergines, peas, carrots and fresh herbs. It is topped with a sweet potato puree to make it a fibre and anti-oxidant powerhouse with every mouthful.
