This classic Massaman style Thai curry paste is made to a traditional recipe using ingredients such as dried chillies, garlic, shallots alongside warming spices such nutmeg and mace. Mild in heat but richly aromatic, this style of curry paste traces its history through the spice routes from Persia. Often served with peanuts in, this curry works especially well with root vegetables such as boiled or roasted squash, potatoes or Jerusalem artichokes.

At the heart of Thai curry pastes are fresh, aromatic ingredients, pounded to release their flavour. However, commercial curry pastes often include preservatives, and tend to be more heavily salted than you would find in Thailand. All this is necessary because they're designed to have an (unrefrigerated) shelf life of many months, by which time the vibrancy of the fresh ingredients and aromatics is substantially dulled. There's a reason curry pastes are made fresh in Thai markets!
At som saa we make all of our pastes fresh in house, using traditional recipes and often hard to find ingredients. Free from preservatives or excess salt, we are making them to order so that customers receive the freshest possible product. For that reason the supply available each day will be limited - but we should always have more available soon.
Shelf life and storage: it is important to note that, in order to enjoy them at their best, our curry pastes should be kept refrigerated and used within two weeks of receipt.
