Slow Roasted Balsamic Tomato Bruschettas with Herb Smash & Pistachios

Here’s how you do it

  1. Preheat the oven to 200℃/180℃ fan/400℉/Gas mark 6.
  2. Thinly slice the bread with a serrated knife, cut each slice in half to create 2 triangles (leave smaller end pieces whole).
  3. Drizzle with olive oil and a sprinkle of salt. Bake in a single layer on a baking tray for 8-10 minutes until crisp and golden brown. Leave to cool.
  4. Turn the oven down to 150℃/130℃ fan/300℉/Gas mark 2.
  5. Cut the tomatoes in half lengthways (or quarters for larger tomatoes), toss with salt, pepper, the balsamic vinegar and a drizzle of olive oil. Slow cook in a greaseproof paper lined roasting dish for 1 hour or until soft and squidgy (check at 30 minutes).
  6. To make the herb smash: finely chop the herbs (or use a food processor), then mix with the olive oil & lemon juice, salt and pepper - you want it to be slightly chunky, not too smooth
  7. Finely chop the pistachios.
  8. To assemble: divide the tomatoes between the bruschettas, top with ½ teaspoon of the herb smash and scatter with the chopped pistachios.
